There is no dairy in Coffee Mate (liquid) creamers as far as I can tell… so how long can you leave it out on the counter without it going bad?
Observation: I have left both Coffee Mate and International Delight out for a day or two and they didn’t seem to go bad.
Observation: The bottle says it should be refrigerated at all times.
Conclusion: Since Coffee Mate (and the like) looks a lot like a dairy product, they print that on the bottle for liability’s sake. But, when in doubt, follow the instructions.
